One of my favorite summer drinks to make of late is my Midsummers Dream. When we were in Dublin, we were invited to the opening of the Hendricks Midsummers Night Gin. Since then I have been obsessed with the gin itself and immediately found it in Denver. After a bit of experimenting, Midsummers Dream was created. (Full disclosure, this is strong and you can’t quite taste the alcohol so some have said it’s even a bit dangerous.) ENJOY!
